ofi, Presents Vegan Cocoa and Almond Spread for the INC Innovation Awards

ofi has developed an innovative and on-trend series of nut spreads that use minimally processed natural ingredients. These nut-based products address the explosive growth in the plant-based market and are dairy-free.

This new product serves the emerging need for tasty and healthy food innovation which is available for mass production without common undesirable ingredients like sugar, palm and palm derivatives. We developed a nut butter as a source of protein and fiber for daily consumption with benefits as an indulgent, yet better-for-you product. This spread is also suitable for consumers who are focused on health and wellness or those who are gym and fitness enthusiasts who are looking for indulgence but without any added carbs.

Two key points: ingredient selection and process

  1. For the ingredients, we eliminated palm and processed sugar, and opted for fat-reduced and unsweetened cocoa plus roasted almond kernels for the maximum protein retention. We added date fruit powder and inulin powder for the fiber benefit, and we used the defatted almond protein powder (in lieu of milk ingredients) for nutrition and a creamy tasting profile.
  2. For the process, we developed an innovative process with a combination of roasting and slow grinding the almonds at a low temperature to form a paste, ensuring the protein is not damaged and protein denaturation is reduced.
